Guest Blogger: Zombie Dad w/zombie dad tacos

I've been doing quite a bit of bloggin' lately. Even when I'm not actually on here or my other blog FindingRey,writing and uploading and whatnot, I'm likely taking photos of our everyday stuff to use for them later on.
I take a lot of food pics. Seriously. Because, if I'm not getting to the intended sewing, scrap booking, crafting, etc., I'm at least cooking. Which, in my opinion, is a form of creativity as well as it being an everyday necessity. It is also something that I really enjoy doing.
I cook a lot. Dinner every night and weekend breakfasts and lunches. (Weekday breakfast and lunches don't count much because they are, ya know, oatmeal, cereal, eggs, sandwiches, leftovers, the usual things to get us by.)
So imagine, after every one of those meals are cooked, me with my camera around my neck, trying to find a decent light source, arranging the food for camera presence and snapping away quickly before the actual food is too cold to eat.
I'm sure it gets annoying to watch. And yet, every night, my family endures my little before dinner ritual while they wait hungrily at the table for me to fulfill my desires of being a wannabe (extremely amateur) food photographer.
So yes, I definitely had it coming when I walked in the other night to my husband posed with the camera up to his face in front of a huge plate of tacos. My oldest daughter giggling hysterically in the background awaiting my reaction to their little joke.
I was being made fun of. Once I realized what they were doing I shot them both nasty looks. Zombie Dad responded with "I made tacos, and they are beautiful!" "I need a picture!"
There wasn't even a card in the camera. They were just having fun at my expense!
After a few minutes, I was laughing too.
Then I decided to go ahead and put the card back in the camera so he could really take some pictures, so then, I could blog about these little shenanigans!

Here's Zombie Dad's tacos.

They are prepared like "Reida tacos" (my mom's delicious tacos) but are filled with this recipe from The Homesick Texan. (Zombie Dad's favorite food blog.)
They were super yummy. And because Zombie Dad was taking the pictures, they were still served hot.

To serve them "Reida style", you fry up some corn tortillas (however many you need)just until they are soft and pliable.
Drain them on paper towels.
Stuff with seasoned ground beef (or use the Homesick Texan Recipe for ground beef) also add shredded cheddar cheese.
Pan fry in a skillet or electric frying pan until they are crunchy and cheese has melted.
Serve with pico de gallo (or if you're like Zombie Dad and eldest child, Tapatio) shredded lettuce, sour cream, avocados and your other favorite taco toppings!
